Divide the beam in up to 12 different zones and have them send out MIDI notes for triggering drum samples in your DAW or sampler, or have them send out MIDI CC messages which change value depending on which part of the zone you hit. For added expressivity, you can squeeze the beam to send out a smooth control signal.
