The Behringer Xenyx 1204USB is an 8 channel mixer with 12 inputs and 4 buses, 4 mic/line channels and 2 stereo channels. The mic/line channels each have a XENYX mic preamp and a one knob compressor that is very easy to use. Every channel has 3 band EQ and two sends, each send has a stereo return. Bus 3/4 can be used as a separate output, as a sub mix or a returns level.

The 1204 also has a built in USB audio interface and comes with free software to record what you plug into the mixer onto your computer.
